Back when the chiefs of the Clan Galbraith called for victuals,
the kitchen staff could only make do with whatever simple ingredients
they had at hand - but of course that included salmon and trout,
all manner of game, rich tangy cheeses and, in season, wonderful
vegetables, wild mushrooms and berries ...Imagine having such
a larder to choose from! Fresh Scottish produce is still the
basis of what we do today - although we serve it up with rather
more imagination and much better manners.
